My mother was, without question, the finest cook I have ever known. Not by training or technique alone — but by instinct, by love, and by an insistence that food prepared carelessly is food that fails its purpose. She is still present in the kitchen, in her own way. In the slow building of a sauce, in the particular balance of a spice blend — there are moments where she feels very close. And there are moments, when something isn’t quite right, where her presence makes itself felt just as strongly. We have had our disagreements over the years, the two of us, about the proper way to do things. We probably always will.

From my father, I inherited something equally vital: the firm belief that a guest deserves to be treated as exactly that — a guest. Not a transaction. Not a number. A person who has chosen to spend their time and money with you, and who deserves your very best in return. He understood that generosity, given freely and without calculation, always finds its way back. I have never forgotten that.
